Chef Budha's Ratatouille - Ratatouille is a French Provençal stewed vegetable dish, originating in Nice, and sometimes referred to as ratatouille niçoise.

Included in the box:

  • Tomatoes 1 kg
  • Eggplant
  • Baby Marrow/ Zucchini 250g
  • Medium Potatoes 2kg
  • Brown Onions 1kg
  • Robot peppers
  • Garlic Clove
  • Rosemary 30g


  1. Peel potatoes, and chop into slices. Chop zucchini, eggplant into slices
  2. Crush garlic and chop finely.
  3. Chop onions into slices.
  4. Blanch tomatoes - Create incisions in the top of each tomato, add tomatoes into boiling water on the stove for 45 seconds and place into ice cold water in a bowl. Let that cool down for 5 minutes.
  5. Blanch tomatoes once cooled, peel the skin of the tomatoes and cut tomatoes into slices - 2mm thick.
  6. In a pan, place olive oil, let that heat up and add in garlic, onions , salt, pepper, blanched tomatoes, zucchini and eggplant, mix all together.
  7. Remove from the stove and place everything into a blender and mix together to create the sauce.
  8. In a large oven dish, place sauce in the bottom and smear the sauce at the bottom of the dish.
  9. In the dish, place each of the sliced vegetables ( potatoes, tomatoes, eggplant, zucchini into the dish vertically).
  10. Add remaining sauce on top.
  11. Wrap the dish in tinfoil, place in the oven at 200C and let that @ook for 1 hour.
Blend together the following together: 
Salt, Pepper, Rosemary, Olive oil
